New chef has recipe for success
The Lantern Room and Courtyard by Marriott Edinburgh, both operated by RBH, have appointed a new Executive Head Chef, with plans of several culinary changes on the horizon for guests.
Esteemed chef Nadeem Akhter (52) brings more than 25 years of professional cooking and kitchen management experience to his new role as Executive Head Chef at the city centre hotel and restaurant.
His previous roles include being Executive Head Chef at Radisson Blu Hotel in Riyadh, Saudi Arabia, Radisson Blu in St. Helier, Jersey and most recently Mövenpick Ambassador Hotel in Accra, Ghana.
Nadeem is also no stranger to creating and cooking dishes refined for Scottish palates with a résumé including working with Michelin starred chef Tom Kitchin at his bistro The Scran and Scallie during its three months opening period and in 2013/14 Nadeem was Executive Chef at boutique hotel Tigerlily.
Throughout his career working across the globe, Nadeem has established expertise in training and development, which in turn maximises kitchen, service and team productivity and performance.
Nadeem said:
"I pride myself on being an exemplary and motivated leader with specialisms in fine-dining cuisine, menu and recipe development with a modern fusion, staff training and food cost control.
Working in the industry for more than 30 years, I have a well-rounded understanding of kitchen operations especially within a hotel environment. I’m excited for this new chapter in my career, which brings me back to the Scottish capital.”
After only being in this new role at Courtyard by Marriott Edinburgh a matter of weeks, Nadeem has already spearheaded a new menu for the Terrace at The Lantern Room and curated a perfectly paired gin Afternoon Tea menu ahead of Mother’s Day next month.
